GE Dryer - TESTING THERMOSTATS!!!

New to forum and I am impressed with the knowledge base with your members.

I have a GE gas-dryer that runs normally, until mid-way where it shuts off. It does heat, but needs to cool approximately 15-min to "reset" then begin this viscious cycle of off and on. I know this is common and other sites suggested a thermostat failure.
I have taken the dryer apart and found the thermostats. I am not electrical savvy, but I was able to check the 2-wire ones with the multi-meter for continuity and it appears to check out per suggested sites. However, I cannot find anywhere how to properly check the 4-wire (2 of them) thermostats (GE part# AP2044414) to see if that is the culprit.
Can someone please help me determine how to do this to see which part to replace? Furthermore, am I performing the "correct" troubleshooting steps for a successful surgery of my dryer?
