This is a free-standing dual fuel (gas top, electric oven) range. It’s "like new", barely used, even though it’s of a certain vintage.
I can’t find a comprehensible set of schematics to determine where to access the cooling fan to replace it. I’ve already ordered and received the part. Dacor customer support will not lend any tech support except to "authorized service", I’m in a major metropolitan area and my only choice is the Appliance Doctor
I’m having my building super do this. We teamed together successfully to replace a part in a Bosch dishwasher.
Is it near the top of the unit? Simply remove the top? Is this brain surgery?
I figured out how to remove the top of the range, surprising how little there was under the hood. Turns out a little disk in the cooling fan had become loose, causing the grinding noise. A screw driver and 15 minutes resolved this.
Dacor should make the tech specs available to the owners of their products.

While I very much agree with you as a DIY kind of person myself, there are two reasons why manufacturers hesitate to share info.
Liability - if you or I do something which we hurt ourself or cause secondary damage, fire, electrical etc. you and I have not signed any indemnity clause to relieve the manufacturer of responsibility for our stupidity.
Dealer Protection - dealers want to represent product lines which they can earn a living. If you and I start working on our own stuff, how long before we work on other people’s and the dealer business starts to decline.
You might notice how quickly and how often the service manuals are posted on this or any other forum then are taken down due to copyright infringement claims.
