Refrigerator went from not cold to now Freezing

Any help would really be appreciated! …at first my fridge was too warm – the compressor would shut down and stay off – I installed a used starter/capacitor (3 prong but not an exact match) – now my fridge compartment is always freezing (30 degrees )-- I tried changing the thermostat control (part# WR09X10042) and the new thermostat control (part# wr9x355 – parts guy said it would work fine) – however when turned most of the way down it will not shut the compressor off – I must now turn it down to lowest setting marked "1" – and to get the compressor to come back on i must turn this thermostat control all the way up past 7. When I left it on 3 – it freezes everything in the refrigerator compartment – just so you know I also installed a "Supco" Universal Defrost Timer – the directions said to set it to "12 hours" and "35 minutes" for defrost cycle – since this fridge is freezing I now have it set to defrost every "8 hours" for "35 minutes" just to try and help stop the freezing of the fridge part…

Other notes – I did really clean the coils underneath – and the evaporator fan in back seems to spin fast enough – compressor is not very warm or not hot to the touch even though it is always on – I did replace the defrost thermostat on the defrost coils in the back of freezer - and the defrost heater does glow orange when defrost mode starts – all ice melts off coils and the freezer fan works well… Seems plenty fast… Any help would really be appreciated!

Bump… Any ideas? Please throw me a bone or something… My vegetables have all frozen and with the hurricane it might be a long wait for more… Any ideas?

I now have the thermostat down to 1 – I used a Supco GC140 which is meant to be a direct replacement for a GE thermostat control #WR9X355 – not a direct replacement for my GE thermostat control #WR09X10042 – could this have thrown my dial off – I am now set at 1 rather than the recommended 5 on the dial to maintain fridge in the safe range (32-40 F)
